Why Is This Good For Me?

Yes more beetroot! I had so many left from the farmers markets and hate to waste food so I decided to make a healthy sweet treat. This cake is 100% raw meaning there is no need for baking this cake. The main ingredients are almonds which are high in monounsaturated fats, a healthy fat that is associated with reducing the risk of heart disease. I soaked the almonds over night before making this as it makes the almonds easier for us to digest. Beetroots are full of vitamins, minerals as I mentioned in my previous post, Beets also help to reduce blood pressure and gives you a boost of energy. This sweet beet cake is absolutely delicious and I love the fact that eating a big slice leaves me feeling light and energized unlike a unhealthy processed cake full of sugar. This cake is also naturally gluten free and dairy free which is great for those with allergies or for those who are wanting to start cutting it out from their diet.



  • 3 beetroots grated
  • 2 cups almonds soaked over night
  • 2 cups shredded coconut
  • 1 cup medjool dates
  • 3 tablespoons cacao
  • 1/4 cup organic maple syrup
  • 1 tablespoon psyllium husk (helps to hold the cake together)

Vanilla Frosting

  • 1 1/2 cup cashews soaked for 3-4 hours
  • 100ml coconut oil
  • 1/4 cup organic maple syrup
  • 2 tablespoons natural vanilla extract

How To Make This:

To make the cake

  1. Rinse the soaked almonds well and blend until it becomes a fine flour, add remaining ingredients and blend until combined. It will become a very thick dough like consistency.
  2. Scoop mixture into a spring cake tin and smooth over with a spoon, place in freezer for about half an hour.

To make the frosting

  1. Rinse soaked cashews well, place in blender with all remaining ingredients and blend until smooth and creamy.
  2. Take out cake from freezer and pour the frosting onto the cake smoothing over with a spoon.
  3. Place back into the freezer for about 2-3 hours then it’s ready to eat.
