Why Is This Good For Me?
Lettuce cups are a wonderful healthy alternative to taco shells and wraps. I use all natural ingredients that nourish the body and are very filling. Silver beet, like many leafy greens are rich in minerals and vitamins which are important to be adding to your diet. When looking for silver beet it can be also called chard, look for fresh crisp organic if possible to get the most out of this vegetable! Perfect for nutritious lunch or dinner that will leave you feeling satisfied and full or energy!
- 1 can chickpeas
- 2 tomatoes chopped
- 1/2 cucumber chopped
- 1 cop of corn chopped
- 1 avocado
- 1 handful coriander
- 1/3 cup sprouted mung beans
- 1/2 teaspoon cumin
- 1/2 squeezed lemon
- 1 bunch silver beet
How To Make This:
- Wash and pull apart silver beet and set aside (this will be your lettuce cups).
- Prepare all other ingredients and toss together in a large bowl.
- Scoop some of your mixture in to a stalk of silver beet, top with more avocado and coriander.. Enjoy !!
