Carrots: Carrots are best known for high vitamin A content, which comes from beta-carotene converted to vitamin A in your liver. Carrots also contain vitamin B6, potassium, magnesium, copper, folic acid and thiamine. Eating a diet rich Beta- carotene is also great for your vision!

Spices: We often add spices to food for added flavour, but did you know spices also contain lots of health benefits too? Cinnamon is a warming herb that stimulates digestion and appetite. Nutmeg has been known to have anti-fungal, anti-depressant, and digestive functions. Ginger has most commonly been known to aid in digestion but it also helps nausea and motion sickness, has an anti-inflammatory effect, helps to ease headaches, and is used for asthma and colds.

Ingredients

Carrot cake:

  • 3 cups raw grated carrot 
  • 1 cup almonds (soaked over night then rinsed)
  • 1 cup medjool dates pitted (soak for 4 hours then pour out water)
  • 2 tablespoons coconut oil
  • ½ cup raisins
  • ½ cup desiccated coconut
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • Pinch of salt

Creamy lemon icing:

  • 2 cups cashews (soaked overnight then rinsed)
  • 1/3 cup organic maple syrup or raw honey
  • 1/3 cup water
  • 1 teaspoon vanilla essence
  • 1 fresh lemon juiced
  • 2 tablespoons coconut oil

How to make this?

Raw carrot cake:

  1. Start by making the raw carrot cake, blend all ingredients in a food processor or high-speed blender until combined well.
  2. Scoop out and place in a spring cake tin or I used a bread loaf tin lined with baking paper.
  3. Smooth over with the back of a spoon and place in freezer, let it set for at least an hour

Creamy lemon icing:

  1. Blend all the icing ingredients until well combined and creamy.
  2. Take the raw carrot cake out of the freezer and pour icing on top smoothing over with a butter knife.
  3. Place back in freezer overnight for best results, in the morning you can transfer and leave in fridge.
  4. Serve straight from fridge and enjoy.
